The global foodservice market, worth around $502 billion, is segmented by price, occasion and menu type into three sectors: QSR, (quick service restaurants) Casual Dining and Fine-Dining. In Europe, the top 111 foodservice Operators had combined sales of €83 billion in 2007, these companies growing by 8.3%. QSR accounted for 34%, contract catering 26% and Restaurants and Hotel sectors around 9% each. In the UK, the value of the consumer catering market is c. £13 billion, but current economic conditions indicate a slow down in the historic 3% annual growth rates.
